Ancient Sicilian grains have the particularity of having a very weak gluten which is easily absorbed by the intestine and does not create eating disorders.

Our production chain is entirely local, does not involve any use of synthetic chemicals and is carried out for each individual variety, from cultivation to storage, to the subsequent processing phases. All the grains used for Pasta Minardo are grown in Sicily, aiming to enhance the territory and the workers, thanks to ethical production contracts. Storage takes place separately for each variety, while the milling is carried out with cylinders for the semolina and with stone for the wholemeal, in order not to remove the wheat germ, rich in vitamin E. The semolina is mixed at room temperature, with water mineral coming from a source in the Nebrodi mountains, famous for its purity. The pasta is bronze drawn and dried slowly, at low temperatures, for 24 to 72 hours.

Russello wheat, or black-stemmed Rossello Ibleo, takes its name from the reddish color of the ear. This variety is used for the preparation of our Russello semolina pasta. The traditionally recognized areas of origin, diffusion and cultivation fall in the internal areas of low hills and plains of the province of Ragusa and Syracuse.
The local Rossello variety is an early variety (maturation: 120 days from sowing), therefore suitable for plain and coastal environments. At full earing the plant is 131-136 cm tall including the ear.
