Salto is a fresh and tasty white wine, straw yellow in color with green reflections, which comes from pure Grillo grapes. Intense and varied aromas of white flowers are accompanied by citrus notes. In the mouth it is pleasant and harmonious, of good complexity, with a fresh and savory finish.

This is a joyful wine that has the same music and the same color of a meadow full of crickets, a living meadow that jumps, from straw yellow to bright green. There are notes of rose, mixed with notes of citrus and exotic fruits.
In the mouth, the very first sensation is a long sensation of freshness, of openness, while on the palate the wine is dry, lively. A Grillo indeed, with an entire field at its disposal. The Grillo grapes are grown with espalier and spurred cordon. It begins to be harvested in the second ten days of September and it can age for up to two years.
Origin : Hills around Licodia Eubea, in the extreme south-eastern edge of Sicily
Vineyards : On the hill, overlooking the Dirillo river valley

Training system : Simple Guyot espalier
Harvest : End of August, beginning of September
Vinification : short cold maceration on the skins, followed by soft pressing and fermentation of the must at 16°/17° in stainless steel tanks
Alcohol content : 12.5/13% vol
Color : Straw yellow with green reflections
Aroma : Intense and varied scents of white flowers are accompanied by citrus notes
Taste : Pleasant and harmonious, with good complexity, with a fresh and savoury finish
