Cassata is a dessert with a very ancient history, linked to the traditions of Sicilian pastry making. Its origins date back to the Middle Ages, when Benedictine monks prepared this dessert using almonds, one of the main crops of the island, and ricotta, a product derived from the processing of sheep's milk. Over the centuries, Sicilian cassata has undergone various evolutions, enriching itself with new ingredients such as candied fruit and chocolate chips.
