Beef stigliola (stigghiuola ri vitiaddù) per kg.
Stigliola bovine are a typical dish of the Palermo tradition based on beef intestines. Cooked, as tradition, on the grill and seasoned with salt and lemon, stigliola di bovino are one of the culinary specialties of Palermo.
Stigliola preparation:
Place on the barbecue grill without adding anything, be careful of the flames as the fat feeds them and also be careful of swelling during cooking which can cause splashes with consequent burns. As soon as they are well cooked, quickly cut on a cutting board, add salt and lemon and serve hot.
