The pine cone has always alluded to the egg and this to the mysteries of birth, for the seeds it contains it symbolizes fertility and as the fruit of the fir, an evergreen tree, it brings back the idea of eternity.
Having chosen a historic vine, seeking out and allowing its truest characteristics to emerge, was a bit like contemplating the meanings of the pine cone.
Catarratto is grown on espalier, harvested during the second ten days of September. Its aging capacity reaches two years.
