But when is the vacuum bag opened?

Our main advice is to season only those that you assume can be consumed in a short time, a maximum of a week in the fridge, beyond which they start to become mushy. Those that are not consumed immediately can be vacuum sealed in the same bag, drying them thoroughly if they are wet, paying attention to the opening and cutting near the seal. This detail favors vacuum packing. You can also put it back in the fridge for a long time.

Alternatively, for longer storage or if you don't have a vacuum machine, you can freeze the olives in a well-sealed ice bag. They keep like this for long periods of time, and when you need a small amount you can defrost just the ones you need.
