Only and exclusively Catarratto, an ancient Sicilian vine, to create a pure wine whose high acidity helps to enhance the freshness and aroma of white flowers.
The pine cone has always alluded to the egg and this to the mysteries of birth, for the seeds it holds symbolizes fertility and as the fruit of the fir, an evergreen tree, it leads back to the idea of eternity.
Choosing a historic vine, seeking and letting its truest characteristics emerge, was a bit like contemplating the meanings of the pine cone.
Catarratto is grown in espalier, harvesting during the second ten days of September. Its aging capacity reaches two years.
