Preparation of Meusa bread:
Melt a generous amount of lard in a pan over medium heat and cook the amount of lung and spleen you intend to use. Cook well and wait for it to change color. Prepare a plate with absorbent paper and as soon as the stuff is well cooked put it on the paper, just rest it for a moment without drying it too much. Season the bread immediately while it is hot, add salt and lemon to taste and enjoy the real warm pane ca meusa, (ATTENTION ... do not let it cool), you will feel the true typical taste of Palermo Street Food and you will make a great impression on your guests.
As an alternative to lemon, as per popular tradition, it can be seasoned with thinly sliced caciocavallo cheese or combined with sheep's ricotta.
