Our sweet green olives in vacuum-packed bags can be safely stored in the refrigerator for extended periods of time once they arrive at your home, as long as they remain sealed and vacuum-packed.
But when is the vacuum-packed bag opened?
Our main advice is to season only those you expect to be consumed quickly, within a week in the refrigerator, after which they begin to soften. Those not consumed immediately can be vacuum-sealed in the same bag, drying them thoroughly if they're wet. Be careful when opening the bag, cutting close to the seam. This helps with vacuum sealing. You can also refrigerate them for a longer period of time.
Alternatively, for longer-term storage or if you don't have a vacuum sealer, you can freeze the olives in a tightly sealed freezer bag. They'll keep this way for a long time, and when you need a small amount, you can thaw just the ones you need.
