VEIN
NERO D'AVOLA RIPASSO WINE
IGP Protected Geographical Indication
VIDEO
From the vinification of Nero d'Avola and a subsequent refermentation technique, halfway between the Venetian "ripasso" and the Tuscan "governo", on the marc of the Frappato passito, Vena is born. Deep but at the same time delicate, broad and intriguing in its varied bouquet. It expresses a slight sweetness, never excessive, supported by good acidity and fragrance, the result of the unusual combination of the two varieties.
For this Nero d'Avola Frappato, the particular technique of "ripasso" was chosen, marrying the Nero with fermented pomace of our passito di Frappato, which is not by chance called Between Heaven and Earth. Its passage on the pomace for a certain period manages to give it an extreme elegance, a vein of sweetness, precisely, bringing forth a treasure of perfumes.
Vena achieves the goal of softening the severe character of Nero d'Avola, obtaining a slightly sweet version of the great Sicilian wine, but without resorting to wood.
